Key Cooking Steps
Bring a large pot of water to a full boil. Salt it well .
Drop the pasta in gently, give it a slow stir, and don't walk away.
Fresh pasta moves fast. In 2–4 minutes it will float up and sit still — that's when it's ready.
Key Seasoning & Serving Steps
Sauce First: Your sauce should already be warm in a wide pan, waiting.
Combine and Finish: Lift the pasta straight from the pot with a spider or tongs and drop it into the sauce — don't drain, don't rinse.
Add a splash of the cookingwater to the pan, keep the heat on medium-low heating, and move it all gently for a minute until the sauce wraps around every piece.
Garnish: Finish with a drizzle of good olive oil, a handful of herbs, or cheese if you like. Serve immediately.
Other:
Skip the oil in the boiling water. It does nothing useful and stops the sauce from clinging to the pasta later.
