Ingredients
4 large round zucchini
60 grams stale bread
Fresh basil
Fresh mint leaves
8 sun-dried tomatoes
8 taggiasche olives
1 spring onion
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Macchè Tip
200 grams smoked tofu
The Recipe
Step 1: Prep the Zucchini
First, wash the four large zucchini. Cut them in half lengthwise and scoop out the pulp with a scoop, being careful not to break the outer shell. Set the pulp aside. Brush the inside of the zucchini with some extra virgin olive oil, then season with salt and black pepper. Place them on a baking sheet lined with parchment paper. Bake in a preheated static oven at 180°C for 10 minutes.
Step 2: Cook the Inside
In a pan, cook the spring onion with a drizzle of olive oil. After a few minutes, add the zucchini pulp and cook for a few more minutes until softened.
Step 3: Blend the Filling
In a blender or food processor, combine the stale bread, fresh herbs, sun-dried tomatoes, taggiasche olives, and the sautéed spring onion and zucchini pulp. Blend until you achieve a grainy mixture suitable for filling the zucchini. Adjust the seasoning with more salt if needed.
Step 4: Fill and Grill
Using a spoon, gently stuff each zucchini half with the filling. Place the stuffed zucchini back in the oven for 10 minutes under the grill setting. This will give them a lovely golden finish.
Macchè Tips
Want to make this dish more fulfilling? We’ve got you covered! Here are two options:
Make it Juicy: Cut the smoked tofu into small cubes and cook it with the zucchini pulp in step 2. This will make it juicy and soft!
Make it Crunchy: Crumble the smoked tofu with your hands, season it with salt and oil, and sprinkle it on top of the zucchini before grilling. It will turn golden and crunchy!
