Chocolate & Nuts Salame

INGREDIENTS:
200 grams dark chocolate
120 grams vegan whole grain biscuits
100 grams mixed nuts
60 grams almond milk or rice milk
50 grams sunflower oil
2 vanilla extract (spoons)
powdered sugar
THE RECIPE:
Melt the chocolate Chop the 200 grams dark chocolate into small pieces and melt it in a bowl set over a pot of boiling water (Au bain-marie). Once melted, set it aside to cool slightly while you prep everything else.
Toast and crumble Toast the 100 grams mixed nuts in a hot, dry pan until golden, then roughly chop them with a knife. Crumble the 120 grams vegan whole grain biscuits with your hands into pieces, do not stress over precision, just avoid crumbs so fine they disappear into the mixture, or pieces bigger than a bite.
Bring it together Stir the 50 grams sunflower oil, 60 grams almond milk or rice milk, 2 spoons of vanilla extract into the cooled melted chocolate until fully combined. Mix the toasted nuts and crumbled biscuits, mixing just enough to distribute them evenly.
Shape the log Let the mixture cool until firm enough to handle. Spoon it onto a sheet of baking paper and, using the edges of the paper, shape it into a log about 7 to 8 cm thick. Twist the ends of the paper like a candy wrapper to seal, then wrap the whole thing again in aluminum foil.
Chill and slice Put the wrapped log in the fridge and try to resist slicing into it for a few hours. Let it sit at room temperature for 10 minutes before serving so it softens just slightly.
