How to use it with your fresh pasta

Don't overthink the sauce. Warm it gently in a wide pan over low heat while your pasta cooks — it needs two or three minutes, nothing more. When the pasta float up and sit still, lift them straight from the pot with a spider or tongs and drop them into the sauce. Add a splash of the starchy cooking water, move everything together for a minute, and serve immediately.

No boiling, no rushing. The pasta is hot, the sauce is warm, and that's exactly where you want to be.
